1/2 cup long grain Rice
1-1/4 cups Evaporated Milk
1/2 cup Sugar
f.g. Salt
1-1/2 tsp. Vanilla

Directions:
Directions:
Cook rice according to package directions, until fluffy and tender.

Add evaporated milk and mix together. Add sugar, salt, and vanilla. Mix well. Pour into a round, one-quart glass casserole and dust lightly with cinnamon. Blow cinnamon so that it forms a delicate seal. Bake at 350 degrees for 30 minutes, or until the middle of the pudding seems firm. Check for firmness by inserting a knife gently into the middle. If the milk is still liquid, allow to bake another 5 or 10 minutes. Serve plain or with a topping of sweetened whipped cream.

This was a favorite dessert of the children even though it was only baked for holiday and Sunday dinners. When Mother babysat my children in New Orleans one year, she made it one day for her grandchildren who gobbled it up. Wanting to please them, she made it again the very next day – and they wouldn’t touch it. She was so bewildered. I concluded that they did love it but, unfortunately, not for two days in a row.
