2 cups flour (heaping)
2 tsp. baking soda
1/4 tsp. salt
2 tbsp. cocoa (rounded)
1/4 tsp. baking powder
2 eggs
2 cups sugar
1/2 cup shortening
1/2 cup buttermilk (sour milk)
2 tsp. vanilla
1 cup boiling water

Preheat oven to 375ºF.

Spray two cake pans with cooking spray and flour, set aside. Combine first 5 ingredients in large bowl. In another bowl beat eggs, add shortening, sugar and cream well. In a measuring cup, add buttermilk, boiling water and vanilla. Add egg mixture and buttermilk mixture alternately with dry ingredients. Mix well. Dough will be thin. Bake for about 30 minutes, when toothpick inserted in centre of cake comes out clean.

To make buttermilk add 1 tbsp vinegar to measuring cup then add milk to measure.
