2 haddock fillets (about 1 lb.)
¾ cup low-sodium soy sauce
1 chunk (1"x2") fresh ginger, peeled and grated
¼ cup white onion, finely diced
¼ cup brown sugar
juice of 1 lemon
¼ cup Italian parsley leaves, chopped
salt and pepper to taste

Directions:

Combine ingredients for the marinade in a small mixing bowl.
Arrange haddock in a 2-inch deep baking dish and pour marinade over the fish, turning the fillets to ensure they are well soaked.
Cover the dish and refrigerate for at least 2 hours.
Preheat oven to 325º.
Bake the fish in the marinade for 25 minutes, or until cooked throughout and is tender and flaky.
Serve the haddock on warm plates, and spoon juices from the pan over each serving.
