1/4 cup olive oil
6 large cloves garlic, minced, lightly sauteed
1 T smoked paprika
1 tsp Tabasco sauce
4 oranges
1 whole chicken, rinsed, dried
3 onions, roughly chopped
3 lbs yellow fleshed potatoes, cut into small pieces

Directions:
Directions:
Combine the olive oil, garlic, paprika, Tabasco sauce along with the juice and zest of two oranges in a bowl. Place the chicken in a resealable bag and add the marinade. Refrigerate for at least one hour or up to one day.

Place onions in a roasting pan. Slice and stuff remaining oranges into cavity of chicken. Set chicken on top of onions. Cover with foil.

Place in preheated oven at 425*F. Roast for 45 minutes, basting periodically.

Remove foil, add the potatoes to the pan and continue to roast for another 45 minutes.

For a little more vegetables, try serving this dish with roasted mushrooms. Place the mushrooms in the roasting pan for about 20 minutes before completion.
