4 cups frozen shredded hash browns (thawed)
3 tbsp melted butter
1/4 tsp each salt and pepper
7 eggs
1/4 cup milk
1 1/2 cup shredded cheddar cheese
1 cup diced ham

Directions:
Directions:
Combine hash browns, butter, salt and pepper
Spray muffin tin
Fill cups 3/4 of the way wth the hashbrowns and using your fingers them down to the bpttom
place in oven @ 400 for 20 minutes

Whisk eggs and milk, stir in cheese and ham

Remove cups from oven reduce temperature to 350. Fill cups to almost the top, and return to oven for 20 - 25 min
