4 oz. back, cooked & chopped
1 tbsp. butter
1/2 c. finely chopped onions
salt/white pepper
2 tsp. garlic
2 cups heavy cream
3 dozen oysters w/ liquor
4 cups fresh, chopped spinach
Crystal Hot Sauce
Worcestershire Sauce

Directions:
In saucepan, over med. heat, melt butter. Add the onions. Season w/ salt & pepper. Cook until wilted, about 4 minutes. Add the garlic- cook 30 seconds. Stir in heavy cream and bring to a simmer. Add 2 dozen oysters & their liquor, cook 4 minutes. Add spinach & continue to cook for 2 minutes. Using a hand held blender, puree the soup until smooth. (or blender)Season w/ salt and pepper. Reduce the heat to low & keep warm. Before serving, season soup with hot sauce & worcestershire sauce. Garnish with fried oyster & crispy bacon.

Dredge oysters in seasoned flour. Fry until crispy, about 2-3 minutes.
