1 Pound of Pitted, Chopped Dates
3 1/2 Cup of Water
2 tsp. Baking Soda
3 1/4 T. Baking Powder

2 Sticks of Butter
3/4 Cup Sugar
4 Eggs
1 tsp. Vanilla
2 1/2 Cup Flour
1 tsp. Salt

Toffee Sauce:
1/2 Pound of Butter
1 Cup Brown Sugar
1/2 Heavy Cream
1 tsp. Vanilla

Directions:
Directions:
Put the dates into a saucepan with the water. Bring it to a boil and add the baking soda. Set aside.

Cream the butter and sugar in a mixer.

Add the 4 eggs one at a time.

Add the vanilla.

Add the flour and salt. Your batter will be thick.

Slowly pour the date mixture into the batter. Add the baking powder and mix it in.

Pour the batter into a greased and floured pan (8 or 9 inch round pan or even cupcakes)

Bake at 350 degrees for 30-40 minutes.

Make the Toffee Sauce:

Blend the sauce ingredients in a heavy saucepan. Bring it to a boil, then turn it down to a simmer for a minute. The sauce can be made a day ahead and reheated to pour over the cake after it is cooled.

After the cake is cool, take a skewer and punch lots of holes all over the top of the cake. Pour over the Toffee Sauce, which will be absorbed. The cake will stay soft and extremely moist.

This is a very sweet, moist cake that is most popular at Christmas, as it is just like an English pudding, which is an English dessert. It may appeal more to a more developed palate, but the sweetness of the fruit may appeal to kids as well! A little whipped cream on the side cuts the sweetness making it an even more enjoyable treat!
