Dressing:

2 cloves garlic, minced
2 tbsp. red wine vinegar
1/4 tsp. sugar
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. dry mustard
1/4 cup salad oil

Salad:

8 cups baby spinach
3 hard boiled eggs, sliced or grated (I do grated)
8 slices bacon, cooked and chopped
1 cup sliced fresh mushrooms
1 cup grated white cheese such as gouda

Directions:
Directions:
In a bowl or jar, mix together all of the dressing ingredients. Whisk or shake well. Set aside, or refrigerate.

In a salad bowl, combine the spinach, eggs, bacon, mushrooms and cheese. Toss with dressing.
