6 large Vidalia onions
2 tbsp. olive oil
2 tsp. sugar
2 cloves minced garlic
8 cups water
8 beef bouillon cubes
1/2 cup red wine
1/4 tsp. thyme
salt and pepper
1 baguette
1 pack sliced provolone cheese

Directions:
Directions:
Cut Vidalia onions in a French cut style. Sautee the onions and olive oil over medium heat in a large soup pot for about 10 minutes and then add the sugar and garlic into the pot. Cook an additional 20 minutes or until the onions are caramelized.

Add the water, beef bouillon, and red wine to the onions. Bring to a medium boil and cook for 35 minutes. Add thyme and salt and pepper to taste.

We like to cut the baguette into slices and bake it with provolone slices on top to use as croutons with our soup. You can also choose to melt a slice or two on top of your soup and bake in the oven.
