1 cup yellow cornmeal
2 eggs
1 cup milk
½ teaspoon baking soda
¾ teaspoon salt
1 can cream style corn
2 tablespoons bacon drippings or oil

½ pound cheese
1 pound ground beef
1 pkg taco seasoning mix
1 large chopped onion
4 seeded and chopped jalapeno peppers

Directions:
Directions:
Mix cornmeal, eggs, milk, baking soda, salt, cream style corn, and oil and set aside.

Grate ½ pound cheese. Sauté 1 pound ground meat, then add taco seasoning mix. Add one large onion chopped, 4 seeded and chopped jalapeno peppers. Grease large skillet and pour half the batter in the pan. Sprinkle with grated cheese then meat. Top with the rest of the batter. Bake at 350° for 45 minutes.
