1 cup water
½ cup salted butter
1 cup all-purpose flour
4 eggs

Bring eggs to room temperature. Heat water and butter to rolling boil. Stir in flour. Stir vigorously over low heat about 1 minute or until mixture forms a ball. Remove from heat and place into Kitchen Aid mixer. With paddle attachment beat in eggs, all at one time; continue beating until smooth and a little shiny.

For bite size puffs: (Makes about 3 dozen.)
Drop dough by generous teaspoon onto ungreased baking sheet. Bake 20-25 minutes at 400 degrees until puffed and golden. Cool away from draft. Cut off tops. Pull out any filaments of soft dough. Carefully fill puffs with any flavor pudding and whipped cream, or whatever you want to use to fill them. Sprinkle with powdered sugar. Refrigerate until serving.

For larger puffs: (Makes about a dozen.)
Drop dough by scant ¼-cupfulls 3 inches apart on ungreased baking sheet. Bake 35-40 minutes at 400 degrees.

If using a convection oven, bake at 400 degrees for the designated time, but watch closely to avoid over browning.

The larger puffs can be filled with ice cream and fruit. Serve on a puddle of fruit sauce and dust with powdered sugar for a very pretty dessert.
