1 lb ground beef
1 large onion
1 14 oz can diced tomatoes with green peppers, undrained
4 cups water
5 tsp beef bouillon granules
1 1/2 tsp Italian seasoning
1/4 tsp pepper
1 10 oz pkg frozen mixed vegetables
1 cup shredded mozzarella cheese

Directions:
Directions:
Cook beef and onion in dutch oven over medium high heat until beef is brown. Stir in remaining ingredients except cheese.

Heat to boiling, reduce heat. Simmer uncovered for 6-8 minutes stirring occasionally until vegetables are tender.

Sprinkle about 2 tbsp cheese in each 8 oz bowl. Fill with soup.
