1 frenched rack of lamb, sliced into 8 lamb chops
3 tablespoons extra-virgin olive oil
1 tablespoon finely chopped fresh rosemary
3 cloves garlic minced
1 teaspoon salt
Ground black pepper to taste

Preheat your grill or stove top grill pan to medium-high. Combine all marinade ingredients (olive oil through pepper) in a small bowl. Spoon this mixture evenly over both sides of lamb chops. Grill lamb chops for 2 to 4 minutes on each side to desired doneness, 135 for medium-rare. Dab left over marinade on top of the chops. Transfer to platter and let rest for 5 minutes before serving.

The summer of 1975, a few months after we married, Gigi and I went on vacation to Bethany Beach. Gigi loves the beach and she loves me, but she said she'd love me more at the beach. I can take a hint. It took me 17 years, but I saved enough for the down payment to buy our home in Sandbridge. As a bonus it came fully furnished. The dining room table sat eight and it served us well for ten years. As the four D'Amour kids got married and much to the chagrin of the Western World began reproducing, Gigi decided we needed a larger table. She searched catalogs, visited stores and scanned the internet, finally finding a table she liked......in Maine. She hemmed and hawed about the purchase and couldn't pull the trigger. So a couple of plane tickets later, we popped into "Cottage Furniture Maine" in Ogunquit, where she bought a reclaimed barn furniture table with two extensions that could seat sixteen. Whew!

Gigi says these chops are finger food. The kids agree.
