1 Pound Fresh Water Cod Fish
2 Cups Milk for Cooking the Cod
2 Cups Milk for Sauce
1/4 Cup Chopped Onions
1 Bay Leaf
1/2 Stick Butter
3 Tablespoons Flour
Cayenne Pepper to Taste
Salt to Taste
Baked Potatoes
2 Eggs Hard Boiled (optional)

Directions:
Directions:
In a saucepan place the cod and 2 cups of milk. Bring to a simmer for 20 minutes.

In another sauce pan add 2 cups of milk, the chopped onion, bay leaf and cayenne pepper. Simmer for 5 minutes then strain. Keep strained milk in a bowl and wash the kettle you just used.

In the clean kettle melt butter and then add the flour to make a roux. Add the strained milk to the flour mixture and cook on medium heat stirring constantly until the mixture thickens..about 7 minutes. Set aside when done.

Remove the fish from the other kettle and strain that. Set milk aside. When fish is cool enough to touch flake it apart and add to the cream sauce. Add as much of the strained fish milk you need to thin out the cream sauce if it looks too thick. Serve over a baked potato.

As an option you can hard boil 2 eggs and chop them up as a garnish.

When Dad first mentioned this dish to me I thought "YUK". Well I made it for him and tried it and it's been one of my favorite dishes ever since. A lot of dishes involved, but so worth it.
