Tomato Gravy Recipe

Glenna Bulls


2 tbsp. veg. oil
2 c. grape tomatoes,halved
1 tsp. sugar
2 cloves garlic, crushed
4 tbsp. butter
2 tbsp. flour
1 c. veggie broth (can use chicken or beef broth)
1 tbsp. tomato paste
1 tsp. salt
1/4 tsp. pepper

Heat oil until shimmers. Add tomatoes, sugar & garlic. Cook until tomatoes start to soften 3-5 minutes. Add 2 tbsp. butter, let melt. Add flour & cook until brown, 1-2 min. Whisk in broth, tomato paste, s & p until smooth. Continue cooking until mixture comes to boil; it will thicken as it heats. When thick like gravy, remove from heat and stir in remaining butter.

Excellent over grits!
