3 lb fresh spinach o 2 (10 oz) boxes frozen chopped spinach, thawed and well-drained
6. tbsp. parmesan cheese
6 tbsp. minced onion
6 tbsp. light cream or half and half
5 tbsp. butter, melted, divided
salt and pepper
1/2 c. cracker crumbs

Directions:
Directions:
Preheat over to 375º.
If using fresh spinach, wash spinach and drain. Cook damp spinach in a hot skillet until wilted; chop coarsely. Combine spinach with cheese, onion, cream and 4 tbsp. of butter. Add salt and pepper to taste. Place mixture in a shallow, butter 1 1/2 quart baking dish. Mix. cracker crumbs with remaining 1 tbsp. butter and sprinkle over spinach mixture. Bake for 10-15 minutes or until golden and lightly crusted.
