The Cake:

3 Eggs
2/3 Cup Pumpkin
1 Cup Sugar
1 tsp. Lemon Juice
2 tsp. Cinnamon
1/2 tsp. Salt
3/4 Cup Flour
1 tsp. Baking Powder

Icing Ingredients:

1 Cup Powdered Sugar
8 oz, Cream Cheese
1/4 Cup Butter
1/2 tsp. Vanilla

Beat the eggs for 5 minutes in a mixer. Add the sugar, lemon, and dry ingredients by hand. Fold in the pumpkin. Put the mixture in a 10 1/2 x 16 inch cookie sheet that has been greased and lined with wax paper.

Bake it at 350 degrees for 15 minutes.

The pumpkin roll freezes well.

Making the Icing:

Beat the ingredients until fluffy.
