Potato Dumplings and Sauerkraut Recipe

2 or 3 small red potatoes (or 1 large)
1 egg
1 tsp. salt
Flour to thicken

½ lb. bacon diced
1 onion diced

1 lb. Country Style pork ribs
1 package sauerkraut

Directions:
Directions:
Place ribs in saucepan with water to cover. Bring to a boil, then reduce heat and simmer till done. put sauerkraut on top and cook till hot.

Meanwhile:
Saute bacon until almost crisp and add onion till translucent.

Grate raw potatoes with egg in food processor or blender until fine but not pureed. Add enough flour to make dumpling consistency. (I usually drop a small amount in the boiling water to test. It needs to be thick enough to hold together but be able to slough off enough to make "gravy"). Drop by small spoonsful into hard boiling water. (Dip spoon into boiling water first to prevent sticking) Reduce heat and simmer for about 10 minutes add bacon and onion and cook 10 more minutes.

This is a Polish recipe that we always had when we were kids. My mom, Lois Worthley, taught me to make them and we have continued to make them regularly. I always have to make them for my brothers when we are together. The amounts aren't exact. They are made more from "feel" but are well worth the effort to learn that "feel"
