1 lb. pecans
1 c. sugar
2 tsp. cinnamon
1 egg white
1 Tbs. water
tsp. salt

Directions:
Directions:
1. Beat egg white until stiff peaks form. Mix in pecans and water. Make sure the nuts are thoroughly covered with the egg whites.
2. In a separate bowl, mix sugar, cinnamon, brown sugar and salt together. Add to the egg mixture.
3. Grease a cookie sheet. Bake pecans at 300 for 45 minutes, turning every 15 minutes.
4. When done, remove from cookie sheet immediately.

10 lbs of pecans will fill a dozen pint jars and a dozen quart jars.
