⅓ c. Sugar
1 Tbs. butter, room temperature
1½ c. firmly packed brown sugar
⅔ vegetable oil
1 egg
1 c. buttermilk
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
2½ c. sifted flour
1½ c. peeled tart apples, cut into ¼ inch dice, Granny Smith recommended
½ c. toasted chopped pecans, optional

1. Preheat oven to 325º
2. Grease and flour muffin pans or line with paper liners
3. Combine sugar and butter in a small bowl and mix until crumbly. Set aside.
4. Combine brown sugar, oil and egg in a large bowl
5. In another bowl, combine buttermilk, baking soda, salt and vanilla.
6. Blend flour into brown sugar mixture alternately with buttermilk mixture, stirring just until ingredients are combined. Do not overmix or muffins will have giant craters.
7. Fold in apples and pecans.
8. Divide batter among muffin pans filled ⅔ of the way full, and top with sugar butter mixture.
9. Bake until toothpick inserted in the center comes out clean, about 30 minutes.
