1/4 t. corn starch
2 cups milk
2 cups cooked rice
1 tsp. nutmeg
1/2 cup sugar
3 eggs
1 t. vanilla
1 cup cool whip

Directions:
Directions:
Mix sugar and corn starch, add to milk. Bring milk to a boil, add well beaten eggs (see notes) . Remove from heat, add vanilla and nutmeg, stir well. add rice. Cool. When well chilled add cool whip.

Personal Notes:
When adding egg to a hot liquid, beat the eggs in a small dish first, add just a little of the hot liquid to the egg and stir in. Then add the egg mixture into the pan.
