1 lb potatoes
2 oz margarine
1 chicken stock cube
1 lb leeks
1 cup milk
1 onion
2 1/2 cups water
Salt and pepper to taste

Directions:
Directions:
Peel and dice potatoes. Wash and cut leeks in slices. Peel and slice onion. Melt margarine and add vegetables. Cover and cook for 5 minutes, add seasonings, water and stock cube. Bring to a boil, reduce heat, cover and simmer for 20 minutes. Blend soup and return to pot and add milk and heat thoroughly.
