2 3/4 Cups of Flour
2 tsp. Baking Powder
1 tsp. Baking Soda
1/2 tsp. Salt
1 1/2 Cup Firmly Packed Brown Sugar
1 Cup of Shortening/Butter
2 Eggs
1 T. Grated Orange Zest
1 tsp. Vanilla
1 Cup of Buttermilk

Icing:

2 Cups Confectioner's/Powdered Sugar
3 T. Melted Butter
3 T. Orange Juice
1 tsp. Orange Zest

Directions:

Combine the flour, baking soda, baking powder, and salt in a bowl.

Cream the sugar and butter until well blended. Add the eggs, zest and vanilla.

Add the dry ingredients alternately with the buttermilk, beginning and ending with the dry ingredients.

Drop the cookies onto a baking sheet lined with parchment paper. You can use a scoop or spoon. They only spread out slightly as they bake.

Bake them at 400 degrees for 10-12 minutes.

For the icing, combine the powdered sugar, juice, butter, and zest in a small bowl, Stir it vigorously to combine. Ice the cookies after they have cooled. You may need to layer the stored cookies between sheets of waxed paper to prevent the cookies from sticking together.

These drop cookies are another favorite from our childhood. The buttermilk adds a slight tangy-ness to the cookie that compliments the orange flavors. They need to be stored in a good Tupperware container to retain their soft texture and should be eaten in a few days' time. They are fun at the holidays as a refreshing alternative to the wealth of chocolate treats found in most homes. They also are great at summer picnics. These cookies could also be made with lemon juice and zest, if you'd like an alternative option.
