2 c. sugar
1 c. butter
1 tsp. vanilla
4 eggs
1 c. sour cream
2 c. sopaipilla mix (Pioneer Flour Mill-can buy online or from Gunter House in San Antonio if can't find in store)

Directions:
Directions:
Grease and flour large cheese cake pan or bundt pan. (Can use vanilla wafers instead of flour)
Cream sugar, butter and vanilla well. Add eggs one at a time then sour cream. Mix well. Add sopapilla mix slowly. Beat until smooth.
Pour into prepared pan. Bake for 40-45 minutes. Test with cake tester. Remove to cooking rack, top side down. Cool completely. Remove pan and serve with dusting of confectioner sugar or Lemon Glaze.

Lemon Glaze:
3 c. powdered sugar, sifted
1/4 c. milk
11/2 tsp. vanilla
4 tsp. lemon juice
*yellow food coloring
