2 cups flour
teaspoon salt
2 teaspoons baking powder
2 eggs
cup canola oil
1 ⅓ cups sugar
2 tablespoons lemon juice
cup buttermilk
Zest of one lemon
1 cup grated zucchini

Glaze ingredients
1 cup powdered sugar
2 tablespoons lemon juice
1 teaspoon milk

Directions:
Directions:
Mix flour, salt and baking powder in medium bowl and set aside. In large, bowl beat eggs then add oil and sugar until well blended. Add lemon juice, buttermilk and lemon zest to this mixture and blend altogether. Add dry mixture to the wet mixture and blend altogether until well combined. Stir in grated zucchini. Pour batter into greased and floured 9 x 5 loaf pan. Bake at 350 for 40 to 45 minutes. While still warm make glaze and spoon over the bread. Let glaze set up before cutting and serving.
