Double Chocolate Crunchers Recipe

1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 teaspoon vanilla
1 cup flour
1/2 teaspoon baking soda
1 cup quick-cooking oatmeal
1 cup crushed cornflakes
1/2 cup flaked coconut

2 3 ounce packages cream cheese
1 1/2 cups confectioners sugar
2 cups semi-sweet chocolate chips, melted

In a mixing bowl, cream butter. Add sugars and beat until light and fluffy. Add egg and vanilla and mix well. Combine flour and baking soda. Add to creamed mixture. Mix well. Add oatmeal, cornflakes and coconut. Shape into 1 inch balls. Place 2 inches apart on greased baking sheets. Flatten with a glass dipped lightly in sugar. Bake 350 8-10 minutes or until lightly browned. Remove to wire racks to cool,

For filling beat cream cheese and sugar until smooth. Add melted chocolate and mix well. Spread about 1 tablespoon filling on the bottom half of the cookies and top with another cookie. Store in the refrigerator.
