3 cups shredded coconut
2 tablespoons cornstarch
3 large egg whites
1 cup sugar
1 tablespoon vanilla

Directions:
Directions:
Beat egg whites to soft peaks combine coconuts and cornstarch. Fold in coconut mixture to egg whites. Add sugar and transfer to double boiler. Cook over simmering water until sugar dissolves stirring occasionally. Remove from heat add vanilla and cool 10 minutes coat to large cookie sheets with Pam. Drop by spoonful 1 inch apart bake at 300° for 18 minutes until golden brown. Keep an airtight container makes approximately 4 ½ dozen.
