2 One Pound Packages of Fresh Sauerkraut, rinsed and drained well
2 Granny Smith Apples, peeled and chopped
3/4 Cup dry white wine
1 Cup Chicken Broth
3 T. firmly packed Brown Sugar or increase to taste
3/4 Cup Caraway Seeds (optional)

Directions:
Directions:
In a heavy saucepan combine the sauerkraut, chopped apples, wine, broth, brown sugar and caraway in a large, heavy saucepan. Simmer the mixture, covered, stirring occasionally for one hour.

The sauerkraut may be made a day in advance of your dinner. Keep it covered and chilled. It may be re-heated prior to service.

This is a very smooth and slightly sweet sauerkraut that is a nice accompaniment to roast pork on New Year's Day. It doesn't have the bite of un-rinsed cabbage.The recipe was from Gourmet magazine and was provided by my fellow hospital administrator, Chris Sommer. My guests rave about it when it is served during a New Year's Day Open House celebration.
