Cake
2 cups sugar
4 eggs
1 cup cooking oil
2 cups plain flour
2 cups pumpkin (1 lb) can - not pie filling)
2 tsp cinnamon
2 tsp baking soda
½ tsp salt

Icing
1 - (8 oz) cream cheese
1 stick softened butter
2 tsp vanilla
1 lb box confectioner sugar

Cake
Preheat oven to 350º
Mix sugar and eggs – pour in oil and mix at a moderate speed until no visible trace of oil – then mix for 3 min – add flour and spices and mix – add pumpkin and mix at a slower speed – pour into a greased tube pan or sheet cake pan and bake for 1 hour

Icing
Blend cream cheese and butter with an electric mixer – add sugar and vanilla – mix thoroughly and ice your cake
