1/3 C Vegetable Oil
1/3 C Soy Sauce (you can use low sodium sauce if you prefer)
2 T. Honey
1 tsp. Sesame Oil
1/2 tsp. Red Pepper Flakes
2 tsp. Crushed Garlic
2 T. Ginger

Salad:
2 C. Cashews
2 T. Sesame Seeds
3-4 Green Onions, chopped (using the white and green parts)
1 Pound Capellini, cooked
One large handful of blanched or steamed snow peas

Dressing:

Blend the dressing ingredients in a blender or a food processor.

Cook the capellini (2-5 minutes), keeping it firm and drain. Toss with dressing immediately.

Steam the snow peas. Add the snow peas cashews, sesame seeds, and green onions to the dressed pasta mixture.

Refrigerate the salad and serve it cold using a pasta fork.

This is a tasty salad that is perfect in the summertime. It gets better as it sits in the refrigerator! Serve fortune cookies on the side for a simple lunch. Many thanks to my college friend and former roommate, Mary Humphrey, for the recipe.
