vegetable oil (just enough to make a paste with the spices)
1 head crushed garlic
Paprika and Pepper
2 tbsp dried mustard
2 tbsp soy sauce (not for passover)
1 pkg of onion soup mix (you don't have to use the whole pkg - might be too much)
1/4 cup red wine
1/2 - 1 cup orange juice
1 bottle duck sauce

I use the turkey roast that I buy at Nortown (rolled in a net)

Make a paste and rub the turkey with vegetable oil and paprika, pepper, garlic, onion soup, and dried mustard
I add the soy sauce, red wine, orange juice and duck sauce in roasting pan and put the turkey roast in at 350º with a thermometer and cook covered for approximately 1 - 1 1/2 hrs according to your thermometer. Last 20 minutes you can uncover to thicken the gravy. Also keep basting the roast while cooking.
