1/2 lb bacon diced
2 large potatoes, peeled and cubed
1 15oz can diced tomatoes
1 c chicken stock
salt and pepper to taste
2 c thinly sliced cabbage leaves

Directions:
Directions:
Cook bacon in large deep stockpot or saucepan until brown. Drain fat.

Stir in potatoes, tomatoes, and chicken stock. Season with salt and pepper. Bring to a boil, reduce heat and let simmer for 20 minutes or until potatoes are tender.

Stir in cabbage and allow the soup to simmer for a few minutes longer before serving.
