In a saucepan, boil the following ingredients for 2-3 minutes (reserve ½ of the caramel sauce to add to the top after baking in the morning)
2 cups packed brown sugar
½ cup butter, cubed
¼ cup corn syrup (light or dark)

Combine the following in a medium bowl:
3 large apples, peeled and sliced
2 tablespoons lemon juice
1 tablespoon sugar
1 teaspoon apple pie spice
Cut 1pound loaf of cinnamon bread into chunks

Combine:
10 eggs
1 cup milk
1 teaspoon salt
1 teaspoon vanilla extract

Directions:

Grease 9x13 inch pan
Layer ½ of the bread mixture, then the apple mixture, ½ of the caramel sauce, ½ cup chopped pecans, then top with remaining bread mixture. Pour egg mixture over bread, cover and refrigerate overnight.
Bake 350 for 50-55 minutes
Add remaining caramel sauce and let sit for 10 minutes
