2 lb zucchini or yellow sliced (I use half and half)
1/4 cup chopped onion
1 small green pepper, chopped
1 carrot grated or thinly sliced
8 oz stuffing mix (Pepperidge Farm)
1 cup sour cream
1 10 1/2 oz can cream of chicken soup
1/2 cup margarine

Directions:
Directions:
Cook squash, onions, green pepper and carrot in a small amount of water till tender. Drain. In a separate bowl, mix sour cream with soup and add to well drained squash. Gently stir. Add half of stuffing mixture. Lightly grease casserole dish and gently spoon into dish. Cover with remaining stuffing.

Bake at 350 degrees for 25 to 30 minutes.
