Crust
¾ cup Corn flake crumbs
2 tbsp sugar
¼ cup butter melted

Filling
2 eggs separated
1 can (1½ cups) Eagle Brand sweetened condensed milk
⅓ cup fresh or bottled lemon juice
½ tsp grated lemon peel
3 tbsp sugar

1. Combine corn flake crumbs(reserving 2 to 4 tbsp for topping) sugar and melted butter in an 8 inch pie pan or ice
cube tray – press crumb mixture firmly around sides and bottom of pie pan or ice cube tray
2. Beat egg yolks until thick and lemon colored – combine with Eagle Brand condensed milk – add lemon juice and
lemon peel – stir until thickened
3. Beat egg whites until stiff - gradually beat in 3 tbsp of sugar – gently fold egg whites into to the lemon mixture - pour
into crumb lined pan and sprinkle with reserved crumbs – freeze until firm
4. Cut into pie wedges or bars to serve
