4 c flour
2 T baking powder
2 t salt
1 c butter
1 c sweet potatoes, cooked and mashed
3/4-1 c buttermilk

Directions:
Directions:
Combine flour, baking powder and salt. Cut in butter until mixture is crumbly. Stir together sweet potatoes and buttermilk then add to dry ingredients, stirring until just moistened. Turn dough onto lightly floured surface and knead 3-4 times. Pat or roll to 1/2" thickness and cut dough with 3" round cutter. Place biscuits on lightly greased baking sheet. Bake 425º for 10-15 minutes or until golden.
