2 eggs
1 onion
3 russet potatoes
¾ tsp salt
Black pepper to taste
3 tbsp matza meal
Sunflower oil

Directions:
Directions:
Process onions,eggs and potatoes till finely chopped not mush. Do not over process!
Add everything else

Heat oil and add batter spoonful at a time...flatten with back of spoon. Fry till crisp 2-3 minutes and flip

Drain latkes on paper ...add oil as needed in between batches to get hot.

Serve with sour cream, applesauce or maple syrup (very Canadian)

I stand in the kitchen and make them and they are eaten as soon as they are drained! Lol! Chanukah tradition in my home right from when my children were little! Once a year I do this frying! The smell of latkes permeates every thing but it’s worth it! Lol!
