1 cup panko breadcrumbs
3/4 cup Parmesan cheese finely grated
1/4 cup flour
2 eggs
1 lb fresh asparagus trimmed

Spicy Garlic Dipping Sauce

1/4 cup mayonnaise
2 garlic cloves, minced
1 tsp lemon juice
1/4 tsp lemon zest
1/2 tsp paprika
1/4 tsp cayenne pepper
1/4 cup Greek yogurt

Prepare the asparagus: Preheat oven to 425. Lightly spray a baking sheet with nonstick spray

In a shallow bowl, combine panko and Parmesan. Sift the flour into another shallow bowl. In a third shallow bowl, whisk together the eggs.

Working in batcches, coat the asparagus in flour: pat the asparagus with a wet paper towel if the flour refuses to stick. Dredge the flour-coated asparagus in the egg mixture, then the panko mixture, pressing to coat.

Place the coated asparagus on the prepared baking sheet in a single layer. Bake for 10-12 minutes, or until golden brown and crisp. Makes 6 to 8 servings.

Prepare the dipping sauce: In a small bowl, thoroughly mix all sauce ingredients except yogurt. Gently mix in the yogurt just until combined. Makes 1/2 cup.
