1 pound asparagus, cut into 1" pieces
1 Tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon coarsely ground black pepper
8 cups spring mix salad greens
3 cups sliced fresh strawberries
1/2 small onion sliced, can use red
1/2 cup chopped walnuts toasted

2 Tablespoons olive oil
2 Tablespoons balsamic vinegar
2 teaspoons sugar

Directions:
In a bowl, toss asparagus with 1 Tablespoon olive oil. Spread in a 15 x 10 inch baking pan. Sprinkle with salt and pepper. Roast asparagus in oven at 400º 10-15 minutes or until tender. Cool slightly
In a large salad bowl, combine the greens, strawberries, onion, walnuts, and roasted asparagus. In a small bowl whisk together the 2 Tablespoons olive oil, vinegar and sugar. Pour over salad. Toss to coat. Serve immediately.
