1/2 cup shortening
1 cup white sugar
1 egg
1 cup crushed pineapple,drained
1/2 cup nuts
1 tbsp lemon juice
1 3/4 cups flour
2 tsp baking powder
1/4 tsp baking soda
Salt
Maraschino cherries

Directions:
Directions:
1.Cream shortening and sugar together
2.Add egg
3.Stir in pineapple,nuts,lemon juice,flour,baking powder,baking soda and salt
4. Blend well and drop with teaspoon onto cookie sheet
5.Top each cookie with 1/2 cherry
6.Bake at 375º for approx 12 minutes
