1 teaspoon baking powder
1 teaspoon salt
2 large eggs
½ cup milk
1 teaspoon oil
1 (15 oz) can corn, drained
Oil, for frying

Directions:
Directions:
1. Heat the oil: In a deep skillet, heat 1 inch of oil to 375°F (190°C). The oil is ready when a drop of water sizzles and hops on the surface.

2. Prepare the batter: In a bowl, whisk together the flour, baking powder, and salt.

3. Mix wet ingredients: In a separate bowl, whisk the eggs, milk, and oil. Gradually add the dry ingredients, mixing until smooth. Stir in the drained corn.

4. Fry the fritters: Drop spoonfuls of batter into the hot oil, frying for about 5 minutes, flipping halfway through, until golden brown and crispy.

5. Drain and serve: Remove fritters from the oil and place on a paper towel-lined plate to drain excess grease. Serve warm.
