Herb Marinade:
½ cup salad oil
¼ cup lemon juice
1 tsp. salt
1 tsp. marjoram
1 tsp. thyme
½ tsp. pepper
1 clove garlic, minced
½ cup onion, chopped
¼ cup snipped parsley

2 lbs. boneless lamb, (or beef - sirloin, round steak, or London broil), cut in 1½-inch cubes
2 green peppers, quartered
2 sweet red peppers, quartered
Onion, cut into thick slices

Herb marinade:
In a deep bowl, mix salad oil, lemon juice, salt, marjoram, thyme, pepper, garlic, chopped onion, and parsley. Set aside.

To the marinade, add the meat; stir to coat.
Refrigerate overnight or let stand at room temperature 2 to 3 hours; turn the meat occasionally.
When ready to cook, fill skewers with meat cubes, chunks of pepper, and the onion slices. Broil over hot coals to medium-rare, turning frequently and brushing often with melted butter.
