2 cans sliced beets, drained
1 medium onion, sliced
red wine vinegar
olive oil
salt to taste

Directions:
Directions:
1. Place beets in a casserole. Spread them out.
2. Scatter sliced onion over top.
3. Cover beets with vinegar.
4. Add salt.
5. Drizzle with olive oil.
6. Turn beet slices and onions over to coat well with oil and vinegar.
7. Marinate 30 - 60 minutes in refrigerator before serving.
