Ingredients (per serving)

2 slices diced cooked bacon or chorizo
2 eggs
1/4 c heavy whipping cream
4 tbsp. shredded cheese
1/4 c chopped yellow onion
salt and pepper to taste

Directions:
Directions:
1. Preheat oven to 350. Grease baking dish (makes great individual muffin tin size)
2. Fry bacon and set aside.
3. Whisk eggs and cream together and pour into baking dish.
4. Add bacon, onion and cheese. Place in middle of oven and bake 25-30 minutes until set and top is golden brown.
