2 slices sourdough bread
Plan goat cheese
Slices prosciutto
Apricot jam
Butter
Tomato soup for serving

Directions:

Butter all four sides of bread slices. Top one side with a thick layer of goat cheese and add prosciutto. Top the other with a thin layer of apricot jam. Put sandwich together and grill over medium in a grill pan or panini press until golden-brown and cheese is melted. Serve hot with tomato soup for dipping.

They were making this one night at Trader Joe’s at the free sample stand when I stopped in late for groceries years ago. All of the ingredients promptly came home with me and I have been making it ever since. Their tomato soup in a carton is great and keeps a couple weeks in the fridge. I top it with some extra crumbled goat cheese.
