2 whole eggs
1 cup sugar
½ tsp salt
1 tsp vanilla
1 lb Brazil nuts in the shell

Directions:
Directions:
1. Preheat oven to 375º
2. Beat eggs until thick and foamy – add sugar and salt and vanilla and beat well
3. Shell the Brazil nuts - do not blanch – grind nuts in a meat grinder with the finest blade or use a food processor
4. Fold ground nuts into egg mixture and stir to blend
5. Drop by teaspoon on a greased cookie sheet – bake for 10 min
