¼ c. olive oil
3 tbsp. lemon juice
3 garlic cloves, minced
1 tbsp. dried rosemary (or parsley)
1 tsp. salt
1 tsp. pepper
Assorted vegetable combinations (butternut squash in ½-¾" cubes, red pepper rings and asparagus) or (sweet potatoes, rutabaga, asparagus and red onion).

In glass bowl mix first 6 ingredients. Grease jelly roll pan. Mix oil mixture with veggies then place on pan. Bake at 375º for 20-25 minutes adding veggies that will cook more quickly, later.
