2 cups - all purpose flour*
¾ cup - sugar
1½ tsp. - baking powder
¾ tsp. - salt
½ tsp. - baking soda
¼ cup - butter, softened
1 tbsp. - grated orange peel
¾ cup - orange juice
1 - egg
1 cup - fresh or frozen cranberries, chopped
½ cup - chopped nuts

Preheat oven to 350º F. Grease bottom only of a 8½x4½x2½ inches or 9x5x3 inch loaf pans.

In a large bowl, mix together the flour, sugar, baking powder, salt, and baking soda; stir in butter until mixture is crumbly. Stir in orange peel, orange juice, and egg; just until moistened. Add in cranberries and nuts. Pour in pan.

Bake until wooden tooth pick inserted in center comes out clean. Bake 8" loaf pan for 1 hour and 15 minutes. Bake 9" loaf pan for 55 - 65 minutes.

Cool in pan for 5 minutes. Loosen sides of loaf from pan; remove from pan. Cool completely before slicing.

*If using self-rising flour, omit baking powder and salt. Decrease baking soda to ¼ teaspoon.
