Dressing:
2 Tbsp fresh lemon juice
1/4 tsp Dijon mustard
1/4 tsp honey
1/8 tsp salt
1/8 tsp black pepper
1 1/2 tsp black pepper
1 Tbsp extra-virgin olive oil

Salad:
4 c mixed greens
1 yellow peach, pit removed and thinly sliced
16 candied pecan pieces
2 oz goat cheese, crumbled

Directions:
Directions:
Prepare the dressing by mixing it all together in a bowl and whisking it thoroughly. Refrigerate until serving time.

To prepare the salad: Divide the mixed greens, peach, candied pecans, and goat cheese between 2 salad plates. Drizzle on the dressing and serve.
