1 c. grated extra-sharp cheddar cheese (Not pre-grated)
1/2 c. Velvet, cut into pieces
1/2 c. heavy cream
2 tbsp. chopped yellow onion
2 tbsp. diced tomato
1 jalapeno, stemmed, seeded and diced

Directions:
Directions:
Put cheddar and velveeta in a medium pot set over another pot of simmer water over medium heat and heat until cheese mixture is nearly melted. Add cream and stir constantly with a wooden spoon until cheese mixture is and hot and smooth. Transfer melted cheese mixture to a serving dish and sprinkle onion, tomatoes, and jalapeņos on top.
